Quick Banana Chia Pudding
This banana chia pudding is so simple and quick to make with just 3 ingredients. It is great as a snack for both adults and kids or could also be a quick breakfast made the night before. The mix of chia, bananas and coconut milk results in a nutrient packed pudding that has many health benefits
Bananas are a great source of potassium, fibre and antioxidants whilst chia seeds are considered one of the worlds healthiest super foods. They are high in fibre, omega fatty acids, calcium, antioxidants, protein and more. Two tablespoons of chia seeds actually have more calcium than half a glass of milk, more omega-3s than salmon, and more antioxidants than a handful of blueberries. Chia seeds can be found in all health food stores and more recently as their health benefits are being fully realized have found their way into many mainstream supermarkets. Ingredients (Serves 1):
- 1 banana
- 1/4 cup coconut or almond milk
- 2 tbsp Chia seeds
- Blend banana and milk in a blender until smooth
- Add chia seeds and pulse evenly to mix
- Place in a bowl and refrigerate for an hour to allow the chia seeds to plump up and to develop a pudding consistency.
